The Fenouillèdes is an ancient route between France and Spain, and on this route, high up in the foothills of the Eastern Pyrenees, sits Le Soula. Started as a joint project by legendary Roussillon winemaker Gérard Gauby and his former UK importers, Richards Walford, Le Soula produce outstanding wines from very old vineyards. The white is a complex blend of mostly Sauvignon Blanc, Vermentino and Grenache Blanc, with the addition of some five or six other varieites in small quantities. It is fermented with wild yeasts and aged in a mix of tank and oak of various ages. It has great tension and minerality, with a rich, toasty quality. It ages superbly in bottle.
