Pepe Raventos' Mas del Serral is an exceptional wine that redefines what Cava can be along the lines of prestige Champagne. The grapes come from the tiny Clos del Serral plot - a 1.92 hectare vineyard of Xarel-lo and Bastard Negre vines that are more than 80 years old. The wine is aged for 100 months on its lees before release. Just 2,000 bottles are made, and only in the best vintages.
This is an astonishingly complex, mineral wine with intense citrus fruit, perfect balance, great energy and a very long finish. It is drinking beautifully now, but such is the quality that it could easily go on gaining complexity for at least ten more years.
