Vinsanto (not to be confused with the Tuscan 'Vin Santo') is a speciality of Santorini, and Argyros are the masters. The combination of bracing, fresh acidity and concentrated, rich, sweet fruit make this one of the world's best and longest-lived sweet wines. The wine is made from ungrafted Assyrtiko, Aidani and Athiri vineyards in Episkopi that are at least 200 years old, harvested when overripe. For the First Release Vinsanto the grapes are sundried for ten days, then pressed and the must fermented in concrete vats. Ageing takes place in concrete for three years, followed by four years in old wood. A stunning wine.
